Instant Malai Roll is a dessert consisting of soft bread rolled out with mawa filling immersed in creamy milk. It is a bread roll served with sweetened and thickened milk with chopped nuts, flavored rose water.
Take a heavy-bottomed pan or kadhai & pour 2 tablespoons of desi ghee or clarified butter.
Add 1/2cup milk and stir well.
Add 1 cup milk powder to it and keep stirring.
Add 2 tablespoons of powdered sugar to it and mix well. The quantity of sugar can be adjusted as per your taste and requirement, keeping in mind that milk powder has some sweetness of its own.
cook it for 2 minutes on low medium flame until thickens. Instant mawa or khoya is ready. Transfer it into another bowl. Keep aside and cool it down.
Take 1 litre of full cream milk in the same pan and bring it to boil.
Add 1 cup milk powder gradually and keep stirring so that no lumps are formed. It is completely optional to add milk powder. The purpose of adding milk powder is to thicken the milk instantly. You may use the traditional method of preparing rabdi by reducing the milk on low flame.
Add 1 cup fresh bread-crumbs. I would recommend you to use only white bread crumbs. The purpose of adding bread-crumbs to milk is to give instant thickness to the rabdi.
Add two tablespoons of sugar for sweetness. The quantity of sugar can be adjusted as per your taste and requirement.
Cook it for 5 minutes on low medium flame until you get the desired thickness. Add a few strands of saffron.
Take loaf of fresh white bread. Avoid using atta bread or multigrain bread for the fine texture and taste of mithai as they may not yield the same result. Cut the sides of bread slices.
Press it thin using a rolling pin.
Keep one tablespoon of mawa filling at the edge of the bread slice.
Roll it tightly and place it on a plate. Repeat the process to make all the rolls.
Pour the already prepared malai rabri over the rolls slowly. Garnish with finely chopped dry fruits and saffron. Serve chilled. Start assembling the bread roll in the rabri sauce only when it is required. Do not pre-make this as the bread roll my soak all the liquid and may turn soggy and chewy.
